Bunkhouse BBQ Sauce

16 oz Tomato Sauce

6 oz Tomato Paste

1/2 c. Red Wine Vinegar

1/4 c. Chopped Dates

1/4-1/2 c. Honey 

3 T Tamari Sauce

1 tsp Paprika

1/2 tsp Nutmeg (optional)

2 Large Cloves Garlic, chopped

1 Onion, Chopped

1 T Olive Oli

3/4 tsp Ginger

1 T Black Pepper

1 tsp Redman's Sea Salt

4 Pinches (or more) Dried Cayenne Pepper

 

1)  Sautee onion and garlic in olive oil, until translucent.  Remove from pan.

2)  Add onion and garlic, along with the remainder of the ingredients (except honey and ginger) to a blender.  Blend.

3)  In the same pan used for the onion and garlic, add honey, ginger and a splash of water.  Caramelize it by heating it to a gentle bubble for a several minutes, It should be a rich brown.  Immediately add it to the tomato sauce so that it doesn't harden.  You can read more about how to caramelize honey if you are interested.
